The Department of Quality and Food Safety Management is responsible for matters concerning Quality Management and Food Safety, in accordance with legislation, regulations, and relevant contracts for student catering, and specifically:

1. Defines, controls, and evaluates the specifications of raw materials and prepared meals in accordance with the legislation, provisions, and the corresponding stipulated special and technical terms of the announcement.
2. Conducts sampling inspections and evaluates the implementation of the Hazard Analysis and Critical Control Points (HACCP) system.
3. It checks the implementation of general and specific Hygiene Rules, conducts sampling monitoring of prerequisites and CCPs related to microbial and physicochemical criteria, performs sampling checks of food hygiene rules during receipt, processing, storage, maintenance and distribution of them and control of proper management of the storage spaces.
4. It conducts the necessary microbiological analyses and physicochemical examinations of samples under the jurisdiction of the food control laboratory of the PFL and evaluates the results according to the relevant legislation and international bibliography.
5. It monitors the application and compliance with national and European food and water legislation.
6. It proposes the terms and quality specifications for food service tenders. It takes care of the procurement of laboratory consumables (submission of procurement requests, preparation of terms, and evaluation of offers), in collaboration with the Department of Coordination and Control of Food Service Projects and the Student Club Directorate.
7. Prepares administrative documents and reports related to the responsibilities of the Department.

The Department of Quality Management and Food Safety includes the:

Food control laboratory: a fully equipped laboratory where all necessary microbiological analyses and physicochemical tests are scheduled and conducted.
